Ingredients
- 1 Lb hamburger
- Taco seasoning - one packet, or follow Alton Brown's recipe for taco seasoning.
- 15 Oz can tomato sauce
- 15 Oz can fire roasted tomatoes
- 1/2 can (5 Oz) Las Palmas Enchilada Sauce - Optional
- 1/2 cup onion, diced
- 2 or 3 cloves garlic, diced or pressed
- 3 cups beef broth (Using enchilada sauce? Use less broth, maybe 2 cups...?)
- 8 to 9 Oz. (1/2 a package) of spaghetti noodles
- 2 cups shredded cheddar
- Toppings: cilantro, parsley, salsa, etc...
What to do with them...
- Heat a large skillet over medium-high heat and cook the hamburger.
- Add the onion when the hamburger is near done. When the hamburger is all brown, and just before step 3, add the garlic and sautee it for about 30 seconds
- Add taco seasoning, tomato sauce, tomatoes, and their liquid, and mix everything together
- Add beef broth and spaghetti noodles - push them down gently into the mix. If there isn't enough liquid to completely cover the pasta, add more beef broth.
- Bring the mixture to a boil. Once at a boil, reduce heat to low and simmer for about 15 minutes until the pasta is done
- Sprinkle the cheddar over the top, cover the pan again, and heat on medium for 2 to 3 minutes until the cheese is melted
- Mix all of the cheese into the contents, garnish with toppings and enjoy!
