Taco Soup - Cooking Classy

Taco soup. I have to say I've never heard of it before. I was trying to find something interesting and different to do with hamburger, and I happened upon several recipes for taco soup. "Well that sounds good," I thought to myself, so I gave it a whirl. Man was it amazing! I added a few touches to the recipe and the soup did not taste like a taco. It tasted like chili! Awesome.

Ingredients

Taco Soup

  • 2 Tsp. EVOO
  • 1 Lb. hamburger
  • 1 tube (12 Oz.) Trader Joe's Soyrizo
  • 1 medium yellow onion, diced
  • 2 cloves garlic, diced
  • 2 15 Oz. cans fire roasted diced tomatoes
  • 1 15 Oz. can tomato sauce
  • 1 10 Oz. can red enchilada sauce
  • 1 10 Oz. can Ortega mild green chilies
  • 2 cups beef stock or a little more
  • 1 Tbs ancho chili powder
  • 1 Tbs cumin
  • 2 Tsp paprika
  • 1 Tsp Mexican oregano
  • 1.5 Tbs dry ranch dressing mix
  • Juice of one lime
  • Salt and pepper to taste
  • 1.5 cups frozen corn
  • 1 15 Oz. can black beans - drained and rinsed
  • 1 15 Oz. can pinto beans - drained and rinsed

Toppings

Shredded Mexican cheese or crumbled cotija cheese (the best), chopped green or red onions, sliced avocados, corn chips, Etc... I also made some mole and added that to the soup - awesome!

What to do with them...

  1. Heat a large pot or Dutch oven over medium-high heat, drizzle lightly with EVOO
  2. Add hamburger and onions, stirring occasionally until brown. When browned well, add garlic and saute 1 minute longer
  3. Stir in tomatoes with chilies, beef broth, tomato sauce, chili powder, cumin, paprika, oregano, ranch mix, enchilada sauce, Soyrizo, salt and pepper. Simmer for 30 minutes, stirring frequently
  4. After 30 minutes, add in the corn, black beans and pintos, and cook until heated through.
