Taco soup. I have to say I've never heard of it before. I was trying to find something interesting and different to do with hamburger, and I happened upon several recipes for taco soup. "Well that sounds good," I thought to myself, so I gave it a whirl. Man was it amazing! I added a few touches to the recipe and the soup did not taste like a taco. It tasted like chili! Awesome.
Ingredients
- 2 Tsp. EVOO
- 1 Lb. hamburger
- 1 tube (12 Oz.) Trader Joe's Soyrizo
- 1 medium yellow onion, diced
- 2 cloves garlic, diced
- 2 15 Oz. cans fire roasted diced tomatoes
- 1 15 Oz. can tomato sauce
- 1 10 Oz. can red enchilada sauce
- 1 10 Oz. can Ortega mild green chilies
- 2 cups beef stock or a little more
- 1 Tbs ancho chili powder
- 1 Tbs cumin
- 2 Tsp paprika
- 1 Tsp Mexican oregano
- 1.5 Tbs dry ranch dressing mix
- Juice of one lime
- Salt and pepper to taste
- 1.5 cups frozen corn
- 1 15 Oz. can black beans - drained and rinsed
- 1 15 Oz. can pinto beans - drained and rinsed
Toppings
Shredded Mexican cheese or crumbled cotija cheese (the best), chopped green or red onions, sliced avocados, corn chips, Etc... I also made some mole and added that to the soup - awesome!
What to do with them...
- Heat a large pot or Dutch oven over medium-high heat, drizzle lightly with EVOO
- Add hamburger and onions, stirring occasionally until brown. When browned well, add garlic and saute 1 minute longer
- Stir in tomatoes with chilies, beef broth, tomato sauce, chili powder, cumin, paprika, oregano, ranch mix, enchilada sauce, Soyrizo, salt and pepper. Simmer for 30 minutes, stirring frequently
- After 30 minutes, add in the corn, black beans and pintos, and cook until heated through.
