Stuffed Bell Peppers

Ingredients

  • 1 Lb hamburger
  • 1/2 cup rice, cooked
  • 6 bell peppers, tops, and cores removed
  • 1 cup cheese - use your imagination, or whatever you happen to have in the fridge
  • 1 Tbsp olive oil
  • 1 Tbsp onion medium, chopped
  • 1 Tbsp tomato paste
  • 3 cloves garlic, minced
  • 14 Oz can of fire-roasted tomatoes 
  • 1 Tsp dried oregano
  • 1/2 Tsp Kosher salt
  • 1/4 Tsp freshly ground pepper

What to do with them...

  1. While you preheat your oven to 400 degrees F, prepare rice according to the instructions
  2. Heat a large skillet over medium heat and add olive oil. Add onions and saute until soft, about 4-5 minutes
  3. Add tomato paste and saute until fragrant, about 1 minute
  4. Add the hamburger and cook, breaking up the meat. Cook until almost no pink remains, about 4 minutes
  5. Drain the fat and return to heat and add garlic, stir it around the pan for 30 seconds to  a minute, then add the rice and fire-roasted tomatoes, salt, pepper, and oregano
  6. Reduce heat and simmer until thickened, about 5 minutes, season with additional salt and pepper to taste
  7. Remove from heat and add 1/2 cup of cheese and mix until combined
  8. Place peppers cut side up in a 9" by 13" baking dish and spoon the mixture into each pepper
  9. Spray a sheet of foil with a non-stick spray and cover stuffed peppers loosely. Bake until peppers are tender, about 30 minutes. Remove the foil and top peppers with remaining cheese and return to oven, uncovered.
  10. Bake until cheese is bubbly, about 10 minutes then remove from oven and serve
