Ingredients
- 1 Lb hamburger
- 1/2 cup rice, cooked
- 6 bell peppers, tops, and cores removed
- 1 cup cheese - use your imagination, or whatever you happen to have in the fridge
- 1 Tbsp olive oil
- 1 Tbsp onion medium, chopped
- 1 Tbsp tomato paste
- 3 cloves garlic, minced
- 14 Oz can of fire-roasted tomatoes
- 1 Tsp dried oregano
- 1/2 Tsp Kosher salt
- 1/4 Tsp freshly ground pepper
What to do with them...
- While you preheat your oven to 400 degrees F, prepare rice according to the instructions
- Heat a large skillet over medium heat and add olive oil. Add onions and saute until soft, about 4-5 minutes
- Add tomato paste and saute until fragrant, about 1 minute
- Add the hamburger and cook, breaking up the meat. Cook until almost no pink remains, about 4 minutes
- Drain the fat and return to heat and add garlic, stir it around the pan for 30 seconds to a minute, then add the rice and fire-roasted tomatoes, salt, pepper, and oregano
- Reduce heat and simmer until thickened, about 5 minutes, season with additional salt and pepper to taste
- Remove from heat and add 1/2 cup of cheese and mix until combined
- Place peppers cut side up in a 9" by 13" baking dish and spoon the mixture into each pepper
- Spray a sheet of foil with a non-stick spray and cover stuffed peppers loosely. Bake until peppers are tender, about 30 minutes. Remove the foil and top peppers with remaining cheese and return to oven, uncovered.
- Bake until cheese is bubbly, about 10 minutes then remove from oven and serve
