This is made with the wonderful plan of using my Catalina dressing recipe instead of the usual Italian dressing :-)
Ingredients
- 16 Oz. dried rotini pasta cooked and cooled
- 10 Oz. hard salami, diced
- 1 pint cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/2 cup red onion, diced
- 2 cups bell pepper, diced
- 8 Oz. fresh small mozzarella balls
- 2 Oz. parmesan cheese, grated
- 1/2 cup parsley, chopped
- 1/2 cup basil, chopped
- 1 cup Italian dressing - NO! 1 cup Catalina dressing
- Salt and pepper to taste
What to do with them...
- Add all of the ingredients to a large mixing bowl and gently toss. Add more dressing and salt and pepper if desired. Can serve immediately or you can refrigerate until ready.
