I found this recipe in a bunch of old documents I have saved on a hard drive. Surprisingly that document was 25 years old. This is just an incredible salsa, so make up a batch and enjoy!
Ingredients
- 3 chipotle chiles, from 7 oz. can
- 1 pound tomatillo, husks removed and halved.
- 1 red onion, chopped
- 1/3 cup fresh cilantro, chopped
- 1 tablespoon rice vinegar
- 1/2 teaspoon dried oregano
What to do with them...
- Puree chilies and transfer to a large bowl.
- Heat a heavy large skillet over high heat. Add the tomatillos and cook until brown on all sides, about 7 minutes. When done, put them in a blender or food processor
- Add onion to the large skillet and saute until tender, about 4 minutes.
- Add onion to the blender or food processor, then add the cilantro, vinegar, and oregano. Blend it up a little bit depending on how chunky you would like it.
