Chile Relleno Grilled Cheese

  • 2 Hatch green chiles, roasted, peeled, and seeds removed
  • 4 slices of sourdough or your favorite bread
  • 4 slices of cheddar cheese
  • 4 slices of Monterey Jack cheese
  • 2 tbsp butter, softened
  • 1/4 cup cream cheese, softened
  • 1/4 cup shredded Mexican blend cheese
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste

What to do with them...

  1. Prepare the Cheese Filling: In a small bowl, mix together the softened cream cheese, shredded Mexican blend cheese, garlic powder, salt, and pepper until smooth and creamy.
  2. Assemble the Sandwiches:  Spread the cheese filling on one side of two slices of bread.
  3. Layer the roasted Hatch green chiles on top of the cheese filling.
  4. Add a slice of cheddar and a slice of Monterey Jack cheese on top of the chiles.
  5. Top with the remaining slices of bread.
  6. Butter the Bread: Spread the softened butter on the outside of each slice of bread.
  7. Cook the Sandwiches: Heat a skillet or griddle over medium heat. Place the sandwiches on the skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side. Press down gently with a spatula to ensure even cooking and melting.
