Ingredients
- 2 Hatch green chiles, roasted, peeled, and seeds removed
- 4 slices of sourdough or your favorite bread
- 4 slices of cheddar cheese
- 4 slices of Monterey Jack cheese
- 2 tbsp butter, softened
- 1/4 cup cream cheese, softened
- 1/4 cup shredded Mexican blend cheese
- 1/2 tsp garlic powder
- Salt and pepper, to taste
What to do with them...
- Prepare the Cheese Filling: In a small bowl, mix together the softened cream cheese, shredded Mexican blend cheese, garlic powder, salt, and pepper until smooth and creamy.
- Assemble the Sandwiches: Spread the cheese filling on one side of two slices of bread.
- Layer the roasted Hatch green chiles on top of the cheese filling.
- Add a slice of cheddar and a slice of Monterey Jack cheese on top of the chiles.
- Top with the remaining slices of bread.
- Butter the Bread: Spread the softened butter on the outside of each slice of bread.
- Cook the Sandwiches: Heat a skillet or griddle over medium heat. Place the sandwiches on the skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side. Press down gently with a spatula to ensure even cooking and melting.
