I've tweaked the original a little bit to fit the way I cook, but Fantabulosity's recipe is GREAT!
Ingredients
- 1 Lb Hamburger - make as many burgers as you want. I like to make two juicy Lucys, about a third of a pound each. The other third-pound can be saved and reused elsewhere.
- 2 Tbs Worcestershire sauce
- 2 Tbs A-1 Sauce
- 2 Tbs + Dijon mustard
- Cheese. You can use cheddar, swiss, mozzarella, asiago, whatever. You'll need enough to stuff the two burgers, and some more to melt on top of the burger just before popping between buns and wrapping in foil (see below)
- Other stuffings: jalapenos, sauces, cheesy salad dressings...use your imagination
- Hamburger buns - enough to embrace the number of burgers you're making
What to do with them...
- Preheat oven to 375° F.
- Mix the Worcestershire, A-1, and mustard into the 1 Lb burger. Separate into even halves.
- Break halves apart, about 2/3 by 1/3, and stuff the larger half with cheese. Flatten the smaller portion and seal the burger by rolling and flattening it with your hands, or use a stuffed hamburger press like this one. (This is the press I use - I don't gain anything if you buy this one, I'm just really recommending it.)
- Season both sides of the stuffed burgers with salt and pepper
- Choose whether you'll use a cast-iron pan or baking dish. If you're using a cast-iron pan, pre-heat it on the stove and add a little high-temperature oil just before you put the burgers in. If you're using a baking dish, just place the burgers in the dish.
- Put the pan or dish in the oven and bake for 25 minutes. After 25 minutes check the temp - if it's 110° or higher see the next step. If it's not up to 110°, cook a little bit longer.
- Once the meat is up to temp, put a slice of cheese or sprinkle shredded cheese on top and bake for another minute or so.
- Sandwich each patty between buns and wrap in aluminum foil. (Just enough to wrap the burger completely.)
- Place the burgers back in the oven for 3 or 4 minutes to allow the cheese to melt in and for the bun to toast
- Remove from oven and add lettuce, onion, tomato, etc., and top with condiments like ketchup, mustard, salsa, etc...
